Enjoy these Maple Vegan Blueberry muffins with just a few ingredients!
Easy to make and so Delicious!
⅔ cups of Coconut milk ( any plant milk will work)
1 Tablespoon Apple cider vinegar
1 Tablespoon Flax Meal
½ cup unsweetened Applesauce
¼ cup Maple syrup
¼ cup brown sugar
1 ¾ cups Whole White Wheat Flour ( can use all purpose too)
¾ tsp salt
¼ tsp Baking soda
2 tsp Baking powder
1 ½ tsp vanilla
1 cup Blueberries ( I love the wild small blueberries)
Icing
¼ cup Powder sugar
¼ cup Maple syrup
Toppings Chopped Walnuts (optional)
Preheat Oven at 350 degrees
Mix together the coconut milk with the apple cider vinegar. Add flax meal, applesauce, maple
Syrup, and brown sugar. Mix thoroughly. Add flour, salt, baking soda, and baking powder. Mix well but do not over mix. Fold in Blueberries.
In a prepared muffin tin, ( I sprayed mine with olive oil), Using a large cookie scoop or a large tablespoon, fill tins until ⅔ filled.
Sprinkle on walnuts (optional). Bake Large 6 muffin tin approx. 25-30 mins.
12 muffin tin about 20 mins.
